Healthier Mac & Cheese

Mac & Cheese is a household favorite dish, but isn’t necessarily the healthiest option. Here is a great way to spice up this common comfort food with some fresh, organic additions.





1 box Organic Mac & Cheese (Annie’s)

2 tbsp 2% Plain Greek Yogurt

3 tbsp Almond Milk

1 tbsp Rosemary or Regular olive oil

1 Jalapeño (optional)

1 small Heirloom Tomato

1 Avocado

2 cups Arugula

Red Pepper Flakes to taste (optional)

Dash of fresh Rosemary

Salt and Pepper to taste






1. Boil 6 cups of water, dash of salt and olive oil in a medium saucepan.

2. Stir in the pasta, bring to a boil. Cook 8-10 minutes, or until done. Remember to stir occasionally.

3. Drain pasta in a colander before returning to the saucepan.

4. Add 3 Tbsp of almond milk, cheese packet, greek yogurt and rosemary olive oil to the pasta, mix thoroughly.

5. Add diced jalapeño, red pepper flakes, diced tomato and salt & pepper to the saucepan. Mix well.

6. Serve over a bed of arugula and add sliced avocado. Enjoy!
